Yaki Udon (Japanese Stir-Fried Udon Noodles)

- 2 packages udon noodles fresh, frozen, or dried
- 2 tsp toasted sesame oil
- 1/2 lb ground pork
- 1 shallot or 1/2 yellow onion – thinly sliced
- 1 carrot – sliced into matchsticks
- 4 fresh shiitake mushrooms – sliced
- Freshly ground black pepper
- 2 scallions – thinly sliced
- Bonito flakes or furikake optional
For the sauce:
- 2 tsp soy sauce
- 1.5 tbsp oyster sauce
- 1/2 tsp Curry Powder
- 1/2 tsp sugar
- 2 tbsp water
- 1 tbsp sake
Cook udon noodles according to the package instructions. Cook until al dente, being careful not to overcook.
While udon is cooking, whisk together the sauce ingredients in a small bowl.
In a frying pan, heat sesame oil over medium-high heat. Add in the ground pork and cook until almost cooked through.
Then add in the shallot/onion slices, and cook until softened (add in a bit more sesame oil while cooking, if necessary).
Add in shiitake mushrooms, and cook for a minute. Then toss in the carrots, and continue to stir-fry until they are just tender.
Finally, add in the cooked udon noodles, and pour in the sauce. Give everything a few tosses to coat well.
When the sauce is caramelized and the noodles are hot, turn the fire off. Season with freshly ground black pepper. Dish out and serve. Garnish with scallions and bonito flakes or furikake. Enjoy!
