Add almonds, salt, and a couple teaspoons of olive oil into a bowl. Stir well until all almonds are lightly coated.
Add in 1 tsp of the Ceylon cinnamon, and the vanilla paste and honey. Stir well.
Lay almonds flat on baking tray, and bake for 10 minutes.
Remove from oven and let cool for 10 minutes. Return almonds to bowl and add in the remaining 1/2 teaspoon of cinnamon, and stir well. Enjoy this healthy snack anytime of the day!
