Soba Noodles with Furikake

- 2 servings soba noodles
- 1-2 tbsp Season with Spice's Japanese Seaweed Seasoning Furikake
For the dressing:
- 1 tbsp toasted sesame oil
- 2 tbsp rice vinegar
- 1.5 tbsp soy sauce
- 1 tbsp mirin
- 1 tbsp lemon juice
- 2 tsp honey
Optional add-ons:
- Chopped scallions cucumber slices, shredded daikon
Bring a pot of water to a boil and cook the soba noodles according to the package instructions.
While the noodles are cooking, add the ingredients for the dressing into a small bowl and whisk well.
Once the noodles are cooked until al dente, transfer to a colander and drain under running cold water.
Separate noodles into each serving bowl. Pour the dressing over the noodles, toss well, and top with our Japanese Seaweed Seasoning (furikake).
