Turmeric Egg Salad Sandwich

Making turmeric a part of daily cooking can be intimidating to some, but the only intimidating part should be the risk of the intense yellow spice ending up on your white shirt.

Turmeric is surprisingly easy to use in every day dishes, has a myriad of health benefits, and has the magic of turning a simple, routine dish, into something you are excited to eat.

Let’s take an everyday egg dish – omelettes, scramble eggs, deviled eggs, egg salad – and sprinkle a pinch of yellow turmeric powder into it. Instantly the dish is brightened and gives new meaning to “sunny-side up”!

I love egg salad, and recently I began mixing turmeric into the mayo (or plain yogurt) to dye the dish a yellowish-orange color, as well as add a subtle, warm peppery taste to the eggs. When I feel like adding more depth and heat, I sprinkle some cayenne, or for a more complex taste, a dash of curry powder. Regardless of the variation, you get a flavorful, yellow twist to an egg sandwich.

As I always say, Good looking food matters. Appetizing food can change your mood for the better, wake you up from afternoon sluggishness, and even help aid digestion.

Turmeric Egg Salad Sandwich

This easy egg salad sandwich recipe is made with turmeric and yogurt for a delicious and healthy lunch.

Ingredients
  

  • 5 hard boiled eggs – peeled and cut in half
  • 1/4 cup mayonnaise or plain yogurt
  • 1/2 tsp of Season with Spice’s ground turmeric
  • 1/2 small red onion – chopped
  • 1 tbsp chives optional
  • Cucumber slices
  • Salt and black pepper to taste

Instructions
 

  • In a bowl, combine mayonnaise, salt, and ground turmeric. Mix well.
  • Use a fork to mash the hard boiled eggs to your desired texture, then add in red onion (and chives), and stir in the mayonnaise mix.
  • Serve on toast or soft whole grain bread. Place cucumber slices on top and sprinkle with freshly ground black pepper.

Notes

Variations:
1. Feel free to use any type of onion – red, yellow or green.
2. Sprinkle a dash of our Sweet & Spicy Curry Powder for a new flavor.
3. Try spreading Dijon mustard or wasabi (Mark’s favorite) on the bread for even more flavor.
